Course Chapter Introduction
Day 1
Bagel Basics
Learn the history, dough theory, and full process from mixing to baking classic plain bagels.
Day 2
Focaccia & Pizza Theory
Understand fermentation, hydration levels, and bake flavorful rosemary focaccia.
Day 3
Pizza Practical
Master dough shaping, crust styles, and create Margherita & Four Cheese pizzas.
Day 4
Japanese Soft Bread I
Discover the Yudane/Tangzhong method and bake soft, fluffy milk bread.
Day 5
Japanese Soft Bread II
Explore filling, wrapping, and decoration to craft sweet & savory soft breads.
Day 6
Croissant I
Learn croissant theory, ingredient selection, and dough preparation for lamination.
Day 7
Croissant II
Practice lamination, shaping, and baking to create croissants & pain au chocolat.
Day 8
Sourdough & Showcase
Work with sourdough starters, shaping, and scoring for the final showcase bake.

Course duration
This is a 2-monthweekend program, with the beginner course in the first month and the advanced course in the second. Classes are held every Weekend, English class (every Saturday), Chinese class (every Sunday) and each session lasts 4 hours, making it convenient for working adults and hobby learners alike.
